 Pomegranate Champagne Punch
(12 servings)
1 cup simple syrup (recipe below)2 750-ml chilled Champagne
1 1/2 cups light rum
1 1/4 cup pomegranate juice (POM)
1 lemon sliced for garnish
Pomegranate seeds
Mint leaves
Ice
Simple Syrup — 1/2 cup water, 1/2 cup sugar. Bring to a boil then remove from heat and chill.
Combine the Champagne, rum and pomegranate juice and enough simple syrup to sweeten to your taste. Mix in the lemons, seeds and mint leaves. Add ice.
Tip: make an ice block by filling a small zip lock bag with water and freezing. It will melt slowly without diluting the punch. |
